Events PALIHOUSE There's a new brasserie in town, The Hall at Palihouse Holloway, a smart and sophisticated boutique hotel in West Hollywood. You're invited to The Hall's debut Winemaker's Dinner. Every month we will feature limited production, handcrafted wines from artisan wineries with the winemaker hosting the dinner, an opportunity for our guests to know the people, their passions and the stories behind the wines, from vine to bottle. Together, we will create and celebrate a community where food, wine and people come together. Our July 15th dinner features a remarkable collection of wines from Vintner Dave Corey paired with an inspired menu from Chef Stephanie O'Mary. when Tuesday, July 15th 7:30 pm where The Hall at Palihouse Holloway why the Wine & the Food Heirloom Beet Salad watercress / stilton / sherry vinaigrette 2007 Core Rosé a blend of white & red Rhone grapes • Sweet Corn Tortellini thyme / mascarpone / beurre monté 2006 Core White grenache blanc with rousanne & marsanne Alaskan Halibut green pea puree / tri-color cauliflower 2006 C3 Tempranillo by Core a perfect example of the tempranillo varietal Duck Confit crispy fingerlings / frisée / chives 2006 Kuyam Thirteen Moons by Core a Bordeaux-style blend of merlot, cabernet sauvignon, cabernet franc & malbec Chocolate Ganache Cake raspberry fondue / crème fraiche 2004 Candy Core late harvest grenache $75 per person, not including tax or gratuity Seating is limited Reservations are required Superstar Grower & Winemaker Dave Corey is the talent behind Core Wines, as well as his C3, Kuyam, and Turchi labels. To quote Robert Parker, "Dave appears to have a good grip on what he wants to accomplish, which is to produce wines that are completely different from any other California Central Coast offerings. These creative, fascinating offerings...are highly nuanced, very complex and distinctly different." Dave uses modern technology in making his highly rated wines, but is dedicated to sustainable farming in the vineyard. The core of every wine begins in the vineyard and Dave is hands-on and very much in tune with his vines. One sip and you'll understand. • Executive Chef Stephanie O'Mary began her career as an apprentice under Chef Todd English at Olives NY before joining Michael White at Fiamma Oesteria. Stephanie relocated to LA in 2005 to take position as Chef de Cuisine of Dakota Restaurant at the Hollywood Roosevelt Hotel. She's now running the kitchen at Palihouse's The Hall, a charming courtyard brasserie with a focus on Southern French classics. Chef Stephanie's menu is market-inspired. She keeps it simple, using the freshest seasonal ingredients to create dishes that are rich in flavor and pleasing to the palate, adding an earthy, rustic touch to French favorites. PRESS RELEASES
